This wine was fermented using Free Run Juice and wild indigenous yeasts, the wine is as described, it has a wild and free spirit, Classic Burgundian Flinty wine.I often say to people tasting this wine, its a little like good cheese, The Palate is Fresh and crisp the wine has not undergone Malolactic fermentation so it has great length and the perfect “tension”, A great wine for those after this limited release Classic Chardonnay.
